Tozzetti - ciasteczka podwójnie pieczone
Składniki:
1. Migdały sparzyć i obrać a następnie dość drobno zmielić, ale nie na proszek.
2. Przygotować dużą blaszkę (28 na 41 cm).
3. Mikserem utrzeć w misce masło z cukrem, dodać pozostałe składniki i wymieszać. Na koniec wsypać migdały i również wymieszać.
4. Przenieść ciasto na stolnicę i jeszcze chwilę zagniatać dłońmi.
5. Elastyczne, miękkie ciasto podzielić na 4 części i uformować z nich wałki o długości około 38 cm. Ułożyć je na blaszce wyłożonej pergaminem w 5 - centymetrowych odstępach.
6. Piec 20 - 25 min w piekarniku nagrzanym do 180oC, aż nieco się przyrumienią i stwardnieją (ciasto nie może się jednak zrobić zbyt twarde - można sprawdzać je robiąc palcem niewielkie wgłębienia).
7. Wyjąć z piekarnika i odstawić do przestudzenia na 5 - 10 min. Potem ostrożnie przenieść wałki na stolnicę i pokroić nożem ząbkowanym na ukośne kromki grubości około 1,5 cm).
8. Ciasteczka ułożyć na tej samej blasze, obniżyć temperaturę piekarnika do 160oC i piec jeszcze ciastka około 20 min., aż ładnie się zrumienią. Aby tozzetti były na prawdę suche, można zostawić je w wyłączonym piekarniku na kolejne 15 - 30 min. Kiedy ostygną przechowywać je w hermetycznym pojemniku.
